UsesStachyose is widely present in legumes and are indigestible by humans because of a lack of α-galactosidase. As a result, these compounds undergo fermentation in the colon with the concomitant production of CO2, H2, and CH4, commonly referred to as flatulence.
UsesStachyose - 70% is used in method for preparing high-purity Stachyose from Rehmannia glutinosa by combining subcritical and microbial fermentation.
